Elevate dinner with prosciutto-wrapped chicken stuffed with mozzarella and basil, paired perfectly with pasta in passata sauce.
Ingredients:
  • 4 chicken breast fillets
  • 200g mozzarella
  • 16 semi-dried tomatoes
  • 24 basil leaves, plus extra small basil leaves to serve
  • 8 prosciutto slices
  • 300g tagliatelle
  • 375.00 ml tomato passata (sugo)*
Instructions:
  • Preheat the oven to 180C. Carefully create a pocket in each chicken breast using a small knife, ensuring not to cut all the way through. Stuff each pocket evenly with mozzarella, tomatoes, and basil. Season with salt and pepper. Place 2 slices of prosciutto on a work surface, slightly overlapping, then wrap each chicken breast to enclose the filling.
  • Continue this delicious process with the remaining slices of prosciutto and chicken.
  • Heat oil in a large frypan over medium-high heat until shimmering. Sear chicken breasts for approximately 6 minutes until golden brown. Finish cooking in the oven for 8-10 minutes until chicken is done.
  • Cook the pasta in boiling salted water as directed on the packet, then drain it. Heat the passata in a pan over medium heat, and combine it with the cooked pasta. Slice the chicken and serve it over the pasta, garnished with small basil leaves.
