Vegetable ribbon skewers with tomato salsa

Grilled skewers with zucchini, pumpkin, and tomato salsa - a perfect blend of flavors!
Ingredients:
  • 450g zucchini
  • 400g butternut pumpkin, peeled into ribbons
  • 1 red capsicum, cut into 2.5cm pieces
  • 36.40 gm extra virgin olive oil
  • 1 tsp dried oregano
  • 50g goat’s cheese, crumbled
  • 3 roma tomatoes, seeded, finely chopped
  • 1/2 small red onion, finely chopped
  • 1 garlic clove, crushed
  • 20.00 ml finely chopped fresh basil
  • 40.00 ml finely chopped fresh flat-leaf parsley
  • 40.00 ml red wine vinegar
  • 75.08 gm extra virgin olive oil
Instructions:
  • Combine zucchini, pumpkin, and capsicum in a large bowl. Drizzle with oil and sprinkle with oregano. Mix thoroughly. Skewer 1 piece of capsicum, zucchini, and pumpkin on each skewer, creating a colorful combination. Place each skewer on a plate. Repeat to make a total of 8 skewers.
  • Prepare a vibrant Tomato Salsa by mixing together fresh tomatoes, onions, garlic, basil, parsley, vinegar, and oil in a stylish glass or ceramic bowl. Don't forget to generously season with salt and pepper for the perfect flavor balance.
  • Preheat a chargrill pan or barbecue grill over medium heat. Grill skewers, turning occasionally, until vegetables are golden and tender, about 3 to 5 minutes per side. Place on a serving tray, top with Tomato Salsa, and sprinkle with goat’s cheese before serving.
