Vegetable rice paper rolls

Create flavorful vegetarian rice paper rolls - ideal for school lunches.
Ingredients:
  • 2 iceberg lettuce leaves, shredded
  • 1 small carrot, cut into matchsticks
  • 1/4 capsicum, cut into matchsticks
  • 1 small Lebanese cucumber, cut into matchsticks
  • 8 round 16cm-diameter rice paper sheet
  • 1 tsp tzatziki
Instructions:
  • Follow the instructions on the packet to soak the rice paper. Next, spread 1 teaspoon of tzatziki over one-half of the sheet. Add some lettuce, carrot, capsicum, and cucumber. Fold in the sides and roll up tightly to seal the filling.
  • Assemble each ingredient on a plate to build 8 rolls: rice paper sheets, tzatziki, lettuce, carrot, capsicum, and cucumber.
