Nourishing alkaline vegetable soup with quinoa and chickpeas for extra protein.
Ingredients:
  • 3 medium onions, chopped
  • 2 green bell peppers, chopped
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 6 cloves garlic, minced
  • 3 tablespoons ground cumin
  • 1 teaspoon chili powder
  • 10 green chile peppers, seeded and minced
  • 8 cups vegetable broth
  • 1 (15 ounce) can chickpeas, drained
  • 0.5 cup quinoa
  • 1.5 cups frozen corn, thawed
  • 1 avocado - peeled, pitted, and diced
Instructions:
  • In a large stock pot over medium heat, sauté onions, bell peppers, carrots, celery, garlic, cumin, and chili powder until vegetables are tender, around 10 minutes.
  • Combine crushed tomatoes and green chile peppers in a large pot. Add broth, chickpeas, and quinoa. Season generously with salt and pepper. Bring to a boil, then simmer on low for 30 minutes.
  • Stir in the corn and heat through for approximately 5 minutes. Ladle the soup into bowls and garnish with fresh avocado slices.
