Fresh summer rolls bursting with crisp veggies wrapped in rice paper for a refreshing and healthy snack or meal in the sunshine.
Ingredients:
  • 16 rice paper sheets
  • 0.5 (16 ounce) package rice noodles
  • 16 leaves lettuce
  • 1 cup shredded red cabbage
  • 1 cup shredded green cabbage
  • 1 cup bean sprouts
  • 1 cup pea sprouts
  • 0.66666668653488 cup chopped fresh cilantro
  • 1 medium carrot, shredded
  • 0.5 medium avocado, sliced
  • 0.5 medium red bell pepper, sliced
  • 0.5 medium green bell pepper, sliced
  • 0.5 medium yellow bell pepper, sliced
Instructions:
  • 1. Boil a large pot of water until bubbling. Take off the heat and gently introduce rice noodles. Allow noodles to soak for 8 to 10 minutes until al dente, stirring occasionally. Drain thoroughly.
  • 1. Fill a bowl with warm water. Soak 1 rice paper sheet until soft, around 15 seconds. Place softened rice paper on a work surface. 2. Arrange 1 lettuce leaf in the center, starting at the bottom. Pile up rice noodles, cabbage, sprouts, cilantro, carrot, avocado, and bell peppers. 3. Fold the bottom of the rice paper over the filling, then roll up. Fold in the sides to seal. 4. Repeat to make more rolls. Serve and enjoy!
