Ingredients:
  • 1 large white onion, chopped
  • 0.5 cup dry lentils
  • 3 tablespoons curry powder
  • 1 pinch cayenne pepper
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
  • 1 (8 ounce) can kidney beans, drained and rinsed
  • 0.5 cup raisins
Instructions:
  • In a large pot over medium heat, sauté the onion in oil until tender. Add lentils, garlic, curry powder, cumin, and cayenne pepper. Cook for 2 minutes, then mix in tomatoes, garbanzo beans, kidney beans, and raisins. Season with salt and pepper. Lower the heat and simmer for at least an hour, stirring occasionally.
