Top off this scrumptious vegetarian black bean chili with your favorite toppings and enjoy with cornbread or rice.
Ingredients:
  • 3 (15 ounce) cans black beans
  • 0.25 cup olive oil
  • 2 cups chopped onions
  • 2 medium red bell peppers, coarsely chopped
  • 6 cloves garlic, chopped
  • 2 tablespoons chili powder
  • 2 teaspoons dried oregano
  • 1.5 teaspoons ground cumin
  • 0.5 teaspoon ground cayenne pepper
  • 1 (16 ounce) can tomato sauce
  • salt and ground black pepper to taste
Instructions:
  • Separate the black beans from the liquid, saving 1/2 cup of the liquid. Keep both aside.
  • In a large, heavy pot, heat oil over medium-high heat. Saute onions, bell peppers, and garlic until onions are soft and translucent, about 10 minutes. Stir in chili powder, oregano, cumin, and cayenne pepper; cook until fragrant, about 2 minutes.
  • Combine the reserved black beans, 1/2 cup of bean liquid, and tomato sauce, bringing it to a boil. Stir occasionally. Reduce the heat to medium-low and simmer until the flavors blend and the chili thickens, approximately 15 minutes, stirring occasionally.
  • Season the chili with salt and pepper based on your preference. Serve by ladling it into bowls.
