Flavorful veggie chili with black beans, corn, mushrooms, and bell pepper in a spicy tomato base - perfect for vegetarian and vegan diets.
Ingredients:
  • 1 tablespoon olive oil
  • 6 roma (plum) tomatoes, diced
  • 2 red bell pepper, seeded and chopped
  • 10 fresh mushrooms, quartered
  • 1 cup fresh corn kernels
  • 1 jalapeno pepper, seeded and minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 2 (15 ounce) cans black beans, drained and rinsed
  • 1.5 cups chicken broth or vegetable broth
Instructions:
  • Assemble your ingredients.
  • In a large saucepan over medium-high heat, sauté a flavorful medley of tomatoes, bell pepper, onion, mushrooms, corn, and jalapeño in olive oil until the onion turns translucent, approximately 10 minutes. Season generously with chili powder, cumin, and black pepper.
  • Combine the flavorful black beans, savory broth, and a hint of salt; bring to a boil for a burst of deliciousness.
  • Lower the heat to a gentle medium-low. Transfer 1 1/2 cups of chili to a food processor or blender, then blend until silky smooth.
  • Incorporate the bean mixture back into the soup and enjoy it hot on its own or with rice.
