Caribbean-inspired pork and black bean chili with sweet raisins, tangy olives, and aromatic cloves for a unique flavor twist.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 2 tablespoons bottled minced garlic
  • 1 pound ground pork
  • 1 pound ground sirloin
  • 1 (28 ounce) can whole peeled tomatoes
  • 2 cups low-sodium beef broth
  • 1 (15 ounce) can black beans, rinsed and drained
  • 0.5 cup golden raisins
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon ground cloves
  • 0.25 cup halved green olives
  • 0.25 cup slivered almonds
Instructions:
  • In a large pot over medium heat, sauté onion and garlic in oil until softened, approximately 2 minutes. Add pork and sirloin, cooking until browned, about 8 to 10 minutes. Remove any excess grease from the pot.
  • Hand-crush ripe and juicy tomatoes, incorporating their flavorful juices, and transfer to the pot. Add rich beef broth, along with black beans, plump raisins, aromatic chili powder, ground cumin, a pinch of cinnamon, a hint of salt, a touch of allspice, and a dash of cloves. Bring the mixture to a vigorous boil, then lower the heat to a gentle simmer, covering the pot, until the raisins achieve a delightful softness, approximately 30 minutes.
  • Combine green olives and almonds in the pot and simmer for about 30 minutes until flavors meld together.
