Caribbean-inspired slow cooker beef stew with a delicious blend of brown sugar and rum - a family favorite!
Ingredients:
  • 1 pound beef stew meat, cut into 1-inch pieces
  • 1 small sweet potato, chopped
  • 4 small potatoes, chopped
  • 1 celery rib, chopped
  • 1 turnip, chopped
  • 2 parsnips, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon butter
  • 1 small onion, chopped
  • 0.75 cup pineapple juice
  • 1 tablespoon Worcestershire sauce
  • 0.25 cup brown sugar
  • 1 teaspoon crushed garlic
  • 1 cube beef bouillon
  • 3 tablespoons rum
Instructions:
  • Place the beef, flour, salt, and pepper in a resealable plastic bag and shake well to ensure the beef is evenly coated.
  • In a hot skillet, brown the beef in olive oil until cooked. Transfer the beef to a slow cooker. Deglaze the skillet with vinegar, scraping the bottom, then pour it over the beef in the slow cooker. In the same skillet, melt butter and cook onions until softened. Add onions to the slow cooker along with sweet potato, potato, celery, turnip, and parsnip.
  • In a small saucepan, blend the pineapple juice, Worcestershire sauce, brown sugar, garlic, beef bullion, and rum until the bouillon cube is fully dissolved. Transfer the mixture to the slow cooker.
  • Start by setting your slow cooker to High heat for 1 hour. Then, reduce the heat to Low and continue cooking for another 6 hours.
