Prepare a sweet dough for fun and delicious kids' party cookies!
Ingredients:
  • 125g butter, softened
  • 53.75 gm caster sugar
  • 2.20 gm vanilla extract
  • 1 egg
  • 375.00 ml plain flour
  • 32.50 gm custard powder
  • 225.00 gm pure icing sugar, sifted (see note)
  • 1 egg white
  • 2.65 gm lemon juice
  • 1 x 26g Curly Wurly chocolate bar, halved lengthways
  • 2 red jubes
  • 2 tsp silver cachous
  • 62.50 ml gold sprinkles (see note)
  • Yellow food colouring
  • 50g dark chocolate, chopped, melted
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and prepare 2 large baking trays by lining them with baking paper.
  • With an electric mixer, whip together butter, sugar, and vanilla for 5 minutes until creamy and fluffy. Incorporate the egg and beat until well combined.
  • Sift flour and custard powder over butter mixture, then stir with a wooden spoon until combined. Divide dough in half, shaping each into a disc. Wrap both discs in plastic wrap and chill in the refrigerator for 15 minutes.
  • Roll out each disc between two sheets of baking paper until they are 5mm thick.
  • 1. Place the sword template on the cookie dough and carefully cut around it with a small sharp knife to create 8 sword cookies. 2. Re-roll the remaining dough and use a 4cm round cutter to cut out 16 rounds, then repeat the process with a 3cm round cutter.
  • Gently transfer cookies onto baking trays using an egg lifter. Bake for 10 to 12 minutes, switching trays halfway through. Let cool on trays for 10 minutes before transferring to a wire rack to cool completely.
  • Prepare the Royal icing by gently combining egg white and lemon juice in a bowl. Slowly mix in the icing sugar until a smooth consistency is achieved.
  • Trim Curly Wurly lengths into 4cm pieces using scissors and cut jube into 4 pieces each. Spread icing on sword cookies, then arrange cachous around the base to create a handle. Place a piece of Curly Wurly over the cachous as the guard. Coat one jube piece with a bit of icing and place it on top of the guard as a jewel. Sprinkle decorations over the icing to finish the sword. Repeat with all remaining ingredients. Allow the swords to set for 20 minutes before serving.
  • Color the remaining icing with a sunny yellow hue. Generously spread the cookie rounds with the luscious icing. Allow them to rest for 10 minutes to achieve a perfect set. Transfer the rich chocolate into a snap-lock bag and snip off one corner. Artfully pipe a dollar sign on each cookie to create coins. Let them sit untouched for 20 minutes to set beautifully.
