Spiced Pirate Baked Apples

Apple delight filled with buttery brown sugar, baked in spiced rum sauce, pairs perfectly with creamy vanilla ice cream.
Ingredients:
  • 0.5 cup brown sugar
  • 0.25 cup butter, softened
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 4 tart green apples
  • 2 tablespoons frozen blueberries, or to taste
  • 2 tablespoons raisins, or to taste
  • water, or as needed
  • 2 tablespoons chopped walnuts, or to taste
  • 2 tablespoons spiced rum
  • 1 tablespoon vanilla extract
  • 2 teaspoons cornstarch
Instructions:
  • Heat your oven to 350°F (175°C).
  • Combine brown sugar, butter, cinnamon, and nutmeg in a bowl and mix well.
  • Core the apples, keeping the bottom intact to create a well. Fill each apple almost to the top with the brown sugar mixture. Top with a few blueberries, more brown sugar mixture, and press in some raisins.
  • Cover the bottom of a shallow baking dish with water and mix in walnuts, rum, vanilla extract, and cornstarch until well combined.
  • Place the apples in the water mixture and securely cover the dish with aluminum foil.
  • Place in the preheated oven and bake until the apples are slightly tender for about 20 minutes. Remove foil and continue baking until the sugar starts to caramelize, the liquid thickens, and the apples soften further for about 15 minutes. Spoon the thickened liquid over the apples, allow to cool for 5 minutes, then serve.
