Spicy and flavorful vegetarian chili with customizable heat levels.
Ingredients:
  • 0.5 cup applesauce
  • 1 tablespoon brown sugar
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon dried sage
  • 0.25 teaspoon dried thyme
  • 1 pinch asafoetida powder
  • 1 (15 ounce) can black beans
  • 1 (6 ounce) can tomato paste
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 yellow squash, chopped
  • 2 carrots, chopped
  • 1 sweet potato, peeled and diced
  • 1 cup chopped fresh mushrooms
  • 1 quart water, or as needed
Instructions:
  • In a large pot over medium-low heat, combine applesauce, brown sugar, spices, herbs, and asafoetida powder. Heat through. Add black beans and tomato paste. Include garlic, onion, squash, carrots, sweet potato, mushrooms, and enough water to cover. Bring to a low boil, then simmer for 45 minutes, stirring occasionally.
