Indulgent vegetarian chili with spicy ancho chili, fiery jalapenos, and rich cocoa powder.
Ingredients:
  • 2 pounds orange-fleshed sweet potatoes, peeled and cut into cubes
  • 0.5 teaspoon ground dried chipotle pepper
  • 0.5 teaspoon salt
  • 2 tablespoons olive oil, divided
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, sliced
  • 2 tablespoons ancho chile powder, or to taste
  • 1 tablespoon ground cumin
  • 0.25 teaspoon dried oregano
  • 1 (28 ounce) can diced tomatoes
  • 1 cup water, or more as needed
  • 1 tablespoon cornmeal
  • 1 teaspoon unsweetened cocoa powder
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1 pinch cayenne pepper, or to taste
  • 0.5 cup sour cream, for garnish
  • 0.25 cup chopped fresh cilantro, for garnish
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and prepare a baking sheet with parchment paper or a silicone baking mat.
  • Toss sweet potatoes, chipotle pepper, salt, and olive oil in a bowl until well coated. Arrange sweet potatoes in a single layer on the baking sheet.
  • Roast sweet potatoes in the preheated oven until crispy outside and tender inside, for 20 to 25 minutes. Let them cool to room temperature.
  • In a large pot or Dutch oven over medium heat, sauté onion, garlic, red bell pepper, jalapeno pepper, ancho chile powder, cumin, and dried oregano in the remaining 1 tablespoon of olive oil until onion is softened, about 5 minutes.
  • Combine tomatoes and water with the onion mixture, and bring to a gentle simmer. Stir in cornmeal, 1 teaspoon of salt, sugar, and cocoa powder. Simmer gently while stirring constantly, then reduce heat to low and simmer for 30 minutes.
  • Combine black beans and cooled sweet potatoes with the onion-tomato mixture, adding more water if needed. Simmer for approximately 15 minutes until heated through. Season with salt and cayenne pepper to your liking. Garnish with sour cream and cilantro before serving.
