Spicy black bean and pumpkin soup - perfect for Halloween!
Ingredients:
  • 1 pound dry black beans
  • cold water, or as needed
  • 0.5 cup lentils
  • 2 tablespoons dry roux mix
  • 1 green bell pepper, diced
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 cup pumpkin puree
  • 1 (1.25 ounce) package chili seasoning mix
  • 2 tablespoons white sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground cloves
  • 0.5 teaspoon onion powder
Instructions:
  • In a large bowl, add the black beans and cover them with cool water, allowing them to soak for 8 hours or overnight.
  • Thoroughly drain and rinse the beans before transferring them to a large pot. Cover the beans with 1 inch of water and add the lentils. Bring the mixture to a boil, then stir in the roux mix until completely blended. Cover the pot, reduce the heat, and simmer for about 30 minutes until the beans are tender.
  • Microwave diced bell pepper until slightly tender, around 30 to 60 seconds in a microwave-safe bowl. Stir in tomato soup, pumpkin puree, chili seasoning mix, sugar, cinnamon, nutmeg, cloves, and onion powder into the bean mixture. Cover and simmer for about 15 minutes until flavors have blended, stirring occasionally.
