Savor the global flavors of vegetarian harira, a comforting and flavorful soup.
Ingredients:
  • 18.20 gm olive oil
  • 1 medium brown onion, chopped
  • 2 garlic cloves, crushed
  • 5.00 gm ground cumin
  • 1 tsp cayenne pepper
  • 0.63 gm ground ginger
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 510.00 gm vegetable liquid stock
  • 400g can chickpeas, drained, rinsed
  • 400g can brown lentils, drained, rinsed
  • 1 tsp finely grated lemon rind
  • 65.63 gm lemon juice
  • 82.50 ml finely chopped fresh coriander leaves
  • Warmed pita bread, to serve
Instructions:
  • In a large saucepan over medium heat, heat oil. Add onion and cook, stirring, until softened, about 5 minutes. Stir in garlic, cumin, cayenne pepper, and ginger, and cook for another 30 seconds until fragrant.
  • Combine tomato, stock, chickpeas, and lentils in a pot. Cover and bring to a boil. Reduce heat to medium-low and simmer, covered, for 15 minutes until slightly thickened.
  • Combine the zesty lemon rind, fresh lemon juice, and aromatic coriander. Add a sprinkle of pepper for a perfect seasoning. Serve the flavorful soup in bowls alongside warm pita bread.
