Baklava Pie

Simplify Turkish treat: Quick and easy baklava with sweet, nutty goodness. Just grab orange blossom water from your local store!
Ingredients:
  • 125 g butter plus extra for greasing
  • 200 g walnuts
  • 200 g pistachios plus extra to serve
  • 75 g light brown sugar
  • 1 heaped teaspoon ground cinnamon
  • 150 g granulated sugar
  • 2 large free-range eggs
  • 270 g filo pastry
  • 75 ml runny honey
  • 1 lemon
  • 2 tablespoons orange blossom water
Instructions:
  • - Preheat oven to 170ºC/gas 3-4 and grease an 18cm x 30cm baking tray. - Melt butter and set aside. Chop nuts and mix in a bowl with brown sugar, cinnamon, and 50g granulated sugar. - Whisk eggs, then stir into nut mixture with 100g melted butter. Set aside. - Reheat remaining butter to brush over the filo pastry. - Line the dish with filo sheets, brushing each layer with butter. - Pour nut filling into the case. Fold overhanging pastry to create a ruffled top. - Bake for 45 minutes or until crispy. - Prepare honey syrup while pie is baking: Cook remaining sugar with honey, lemon juice, and 100ml water until a light syrup forms. Off heat, stir in orange blossom water and cool. - Once pie is baked, drizzle over honey syrup and cool completely. - Sprinkle remaining chopped pistachios over the pie and serve with Greek yoghurt on the side, if desired.
