Decadent Greek baklava: layers of flaky filo dough with honey, nuts, citrus, and spices
Ingredients:
  • 100 g walnuts
  • 100 g almonds
  • 100 g pistachios
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 200 g butter
  • 2 X 270g packets (12 sheets) of filo pastry
  • 300 g sugar
  • 100 ml Greek honey
  • 1 cinnamon stick
  • 2 strips of orange zest
Instructions:
  • - Preheat the oven to 180ºC/350ºF/gas 4. - Combine all syrup ingredients in a saucepan with 300ml water; simmer until reduced by a third, stirring occasionally. Let it cool. - Pulse nuts in a food processor until coarse; mix with cinnamon and cloves. - Melt butter and grease a 40 x 25 cm tin. - Layer filo sheets in the tin, brushing each layer with butter. Add nut mixture between layers. - Top with filo, butter the top, and cut into diamonds. - Bake for 30-35 minutes until golden brown, adjusting temperature if needed. - Spoon half the cooled syrup over hot baklava, then the rest after 5 minutes. - Cool before slicing and removing with a palette knife.
