Mixed nut Moroccan rice

Elevate your picnic spread with this crowd-pleasing Moroccan-inspired rice dish bursting with flavor and texture.
Ingredients:
  • 45.50 gm olive oil
  • 50g (1/3 cup) Nature's Selection Pine Nuts
  • 50g (1/3 cup) Nature's Selection Slivered Almonds
  • 60g (1/3 cup) Nature's Selection Cashews
  • 20.00 ml Moroccan seasoning blend
  • 6 green onions, thinly sliced
  • 300.00 gm white long-grain rice
  • 765.00 gm chicken style liquid stock
  • 1 orange, peeled, pith removed, cut into 8 segments
  • 82.50 ml currants
  • 40.00 ml fresh flat-leaf parsley leaves, roughly chopped
Instructions:
  • In a saucepan over medium-high heat, warm 1 tablespoon of oil. Add nuts and cook for 3 to 4 minutes until golden, stirring occasionally. Mix in the seasoning blend until fully incorporated. Transfer nuts to a plate.
  • Heat 2 teaspoons of oil in a saucepan and sauté onions over medium heat for 1 minute. Transfer mixture to a plate along with the nuts.
  • Turn up the heat to high then pour in the remaining oil followed by the rice. Stir well to ensure the rice is coated in oil. Add the stock and orange segments. Keep stirring until the mixture boils. Lower the heat, cover, and simmer for 15 to 20 minutes until the rice has soaked up the stock.
  • Peel and discard the orange segments. Mix in the nut mixture, currants, and parsley. Season generously with salt and pepper. Gently fluff the grains with a fork. Portion into bowls and enjoy alongside grilled lamb, chicken, or fish.
