Spicy vegetarian nachos for two with black beans, meatless crumbles, Cheddar cheese, and sliced jalapenos.
Ingredients:
  • 3 ounces yellow corn tortilla chips
  • 2 teaspoons olive oil
  • 0.25 (12 ounce) package ground beef vegetarian substitute (such as MorningStar®)
  • 2 tablespoons water
  • 1.5 teaspoons hot taco seasoning mix
  • 0.5 cup black beans, rinsed and drained
  • 0.66666668653488 cup shredded mild Cheddar cheese
  • 0.5 cup shredded lettuce, or to taste
  • 0.25 cup purchased salsa
  • 3 tablespoons purchased guacamole
  • 1 tablespoon sliced jalapeno peppers, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium-high heat, sizzle olive oil. Toss in ground beef substitute and sear for 1 to 2 minutes. Blend in water and taco seasoning. Keep cooking and stirring until fully cooked, about 8 more minutes.
  • Layer crunchy tortilla chips on a heatproof plate, then generously sprinkle with hearty black beans. Follow with sizzling fried beef substitute and a generous sprinkle of sharp Cheddar cheese on top.
  • Bake until the cheese is melted and the chips are golden brown, about 5 minutes, taking care not to burn them.
  • Once out of the oven, generously layer with crisp lettuce, zesty salsa, creamy guacamole, and spicy jalapeno peppers.
