Quick and delicious vegetarian nachos ready in 30 minutes!
Ingredients:
  • 1 tomato, diced
  • Olive oil cooking spray
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 x 420g cans red kidney beans, drained, rinsed
  • 250.00 gm water
  • 32.50 gm reduced-salt taco seasoning
  • 125.00 ml tomato salsa
  • 225g packet oven-baked corn chips
  • 250.00 ml grated low-fat cheddar cheese
  • 62.50 ml low-fat yoghurt
  • 58.75 gm low-fat sour cream
  • 2 green onions, finely sliced
Instructions:
  • 1. Preheat a frying pan over medium heat and spray with oil. Cook onion and garlic, stirring occasionally, for 4 minutes. Include beans, water, and seasoning, and bring to a boil. Lower the heat to low and simmer for 10 minutes. Lightly mash the mixture and then stir in the salsa.
  • Preheat your oven to 200°C. Transfer the mixture into a 4-cup baking dish. Sprinkle with chips and cheese, then bake for 10 minutes.
  • Combine yogurt and sour cream, then evenly spread over the nachos. Top with diced tomatoes and onions. Serve and enjoy!
