Vegetarian nasi goreng recipe

Delicious meat-free vegetarian nasi goreng for a flavorful Meatless Monday meal!
Ingredients:
  • 18.20 gm peanut oil
  • 1 bunch baby broccoli, cut into 5cm lengths
  • 1 bunch Dutch carrots, ends trimmed, halved diagonally
  • 250g pkt microwavable jasmine rice
  • 40.00 ml kecap manis or soy sauce
  • 20.00 ml sambal oelek or chilli sauce
  • 200g cherry tomatoes, halved
  • 1 Lebanese cucumber, coarsely chopped
  • 125.00 ml coriander leaves
  • 4 Free Range Eggs
  • 70g peanuts
Instructions:
  • In a hot wok or large frying pan, sizzle half the oil. Toss in baby broccoli and carrot. Sauté for 5-7 mins until crisp-tender. Plate and serve.
  • Combine rice with sweet kecap manis or savory soy sauce and half of the spicy sambal oelek or chili sauce in a wok or pan. Stir-fry for 5 minutes or until heated through. Gently mix in tomato, cucumber, and fragrant coriander.
  • Heat the rest of the oil in a frying pan on high heat. Gently crack the eggs around the edge of the pan and cook for 2 minutes for soft yolks or until they reach your desired level of doneness.
  • Spoon rice mixture into bowls. Add baby broccoli mixture, egg, and extra sambal oelek or chili sauce on top. Sprinkle with peanuts.
