Indonesian fried rice

Transform basic eggs into a delectable family favorite.
Ingredients:
  • 300.00 gm jasmine rice
  • 27.30 gm peanut oil
  • 4 green onions, thinly sliced
  • 250.00 ml frozen peas
  • 42.00 gm sweet soy sauce
  • 2 Birdseye chillies, thinly sliced
  • 4 eggs, at room temperature
Instructions:
  • Boil rice in a large saucepan according to package instructions until tender. Drain and spread on a tray to cool.
  • 1. Preheat a wok over high heat and add 1 tablespoon of oil, swirling it to coat the wok. Add 3/4 onion and stir-fry for 1 minute until softened. Toss in peas and stir-fry for 2 to 3 minutes until bright green. Stir in cooled rice and continue to stir-fry for 3 minutes until heated through.
  • Drizzle rice with sweet soy sauce, sprinkle with half of the chili, season to taste. Stir-fry for 2 minutes until heated through. Remove from heat, cover, and keep warm.
  • Heat the rest of the oil in a large frying pan over medium heat. Crack the eggs into the pan and cook for 2 minutes, until the egg whites are set and the yolks are still soft. Spoon rice into bowls, top with a fried egg, the remaining onion, and chili. Serve and enjoy!
