Indonesian fried rice with savory, sweet, and salty flavors from kecap manis soy sauce.
Ingredients:
  • 3 large eggs, beaten
  • 1 onion, chopped
  • 1 leek, chopped
  • 2 green chile peppers, chopped
  • 0.5 pound skinless, boneless chicken breasts, cut into thin strips
  • 0.5 pound peeled and deveined prawns
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 cup uncooked white rice
  • 3 tablespoons sweet soy sauce (Indonesian kecap manis)
Instructions:
  • Heat a large nonstick skillet over medium heat and spray with nonstick cooking spray.
  • 1. Crack eggs into the sizzling skillet and gently cook until the edges firm up. Use a spatula to guide any remaining liquid egg towards the heat, for about a minute. 2. Carefully flip the whole omelet and cook until it's cooked through, roughly 30 seconds. 3. Place the omelet onto a cutting board and skillfully slice into 1/2-inch strips. Set aside for later use.
  • In a sizzling wok or large pan, heat up vegetable oil and tumble in onion, leek, chile peppers, and garlic. Sauté until the onion is tender, which should take around 3 to 5 minutes. Add in chicken, shrimp, coriander, and cumin, mixing thoroughly. Keep stirring and continue cooking for roughly 5 minutes.
  • Stir in the cooked rice, sweet soy sauce, and omelet strips. Cook until the rice is heated through and the chicken is cooked, about 3 to 5 minutes.
