Vegetarian pad Thai

Whip up a flavorful vegetarian pad Thai using garlic tofu for a simple and tasty meal.
Ingredients:
  • 200g dried rice noodles
  • 60ml soy sauce
  • 32.00 gm brown sugar
  • 40.00 ml tamarind paste or lime juice
  • 60ml peanut oil
  • 4 garlic cloves, thinly sliced
  • 300g pkt Fresh Australian Superfood Stir-Fry
  • 200g Thai Tofu
  • 20g chives, halved
  • 125.00 ml basil leaves
  • 125.00 ml small coriander sprigs
  • 45g peanuts
  • Lime wedges, to serve
Instructions:
  • Place the noodles in a large heatproof bowl and cover them with boiling water. Let them stand for 10 minutes or until they are soft, then drain.
  • Combine the savory soy sauce, rich brown sugar, and tangy tamarind or lime juice in a small jug.
  • In a large frying pan or wok, heat 2 tablespoons of oil over high heat. Add garlic, stir-fry mix, and tofu, stir-fry for 1 min until vegetables start to wilt. Mix in soy sauce, noodles, chives, basil, coriander, and half of the peanuts. Remove from heat and enjoy.
  • Serve the vegetarian pad Thai in individual bowls, garnish with the remaining peanuts, and accompany with lime wedges.
