Vegetarian Red Lentil Coconut Curry

Velvety red lentil coconut curry, perfect with rice.
Ingredients:
  • 1 cup red lentils
  • 2 tablespoons extra-virgin olive oil
  • 6 cloves garlic, minced
  • 2 medium carrots, chopped
  • 1 small onion, chopped
  • salt and ground black pepper to taste
  • 3 medium plum tomatoes, chopped
  • 2 cups vegetable stock
  • 0.5 (14 ounce) can coconut milk
  • 2 tablespoons red curry paste
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon chili powder
Instructions:
  • Rinse the lentils under cold water until they are clean. Drain and set aside.
  • In a large pot over medium heat, warm the olive oil. Sauté garlic until fragrant for around 1 minute. Add carrots and onion, season with a pinch of salt and pepper to enhance flavors. Cook until onions are translucent, stirring occasionally, about 5 minutes.
  • Toss in the ripe tomatoes and a pinch more of salt. Cook for 3 minutes, stirring occasionally. Mix in the vegetable stock and lentils. Crank up the heat to high until it boils.
  • Lower the heat, cover the pot, and let it simmer for 45 minutes, stirring occasionally. Mix in coconut milk, curry paste, curry powder, cumin, and chili powder. Simmer without the cover for an additional 5 minutes. Season with salt and pepper to taste.
