"Delicious vegetarian red lentil curry with caramelized onions, spices, and tomato puree for a hearty and satisfying meal."
Ingredients:
  • 2 cups red lentils
  • 3 cups water, or more as needed
  • 1 tablespoon vegetable oil
  • 2 tablespoons curry paste
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon white sugar
  • 1 teaspoon minced garlic
  • 1 teaspoon minced fresh ginger
  • 1 (14.25 ounce) can tomato puree
Instructions:
  • Rinse lentils thoroughly in cold water until water is clear.
  • Place the lentils in a pot and cover them with water. Bring to a boil, then lower the heat to medium-low. Simmer while covered, adding water when needed to keep the lentils submerged, until they are tender, for about 15 to 20 minutes. Drain the lentils.
  • In a large skillet over medium heat, warm vegetable oil. Cook onions in the hot oil, stirring often, until caramelized, about 20 minutes.
  • Combine the curry paste, curry powder, turmeric, cumin, chili powder, salt, sugar, garlic, and ginger in a large bowl. Add the mixture to the onions and cook over high heat, stirring constantly, until fragrant, for 1 to 2 minutes.
  • Combine the tomato puree and lentils, stirring them in until heated through.
