Vegetarian rice paper rolls recipe

Delicious and versatile rice paper rolls are ideal for lunch, snack, or a quick no-cook dinner option.
Ingredients:
  • 50g vermicelli rice noodles
  • 30 small rice paper sheets
  • 4 radishes, trimmed, thinly sliced
  • 1 Lebanese cucumber, cut into matchsticks
  • 1 carrot, peeled, cut into matchsticks
  • 1/2 avocado, stoned, peeled, sliced
  • 80g cabbage
  • 200g pkt honey soy tofu, thinly sliced
  • 125.00 ml mint leaves
  • 125.00 ml coriander leaves
Instructions:
  • Place noodles in a small heatproof bowl and cover with boiling water. Allow to soften for 2 minutes. Drain well and coarsely chop using kitchen scissors.
  • Prepare a shallow dish with warm water. Soak 1 rice paper sheet in the water, remove and place on a clean board (it will further soften as it sits).
  • Lay out a portion of the noodles, radish, cucumber, carrot, avocado, cabbage, tofu, mint, and coriander on the bottom third of the rice paper. Fold the edge of the rice paper over the filling, then fold in the sides and roll up tightly. Place on a serving plate. Repeat with the rest of the ingredients and rice paper sheets.
