Veggie Filled Sloppy Joes

Savory Italian sausage and veggie-packed sloppy joes, ready in 40 minutes. Classic comfort with a delicious twist!
Ingredients:
  • 1 lb bulk Italian pork sausage
  • 1 cup finely chopped fresh mushrooms
  • 1/2 cup finely chopped green bell pepper
  • 1/2 cup finely chopped carrots
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced red and yellow tomatoes, undrained
  • 1/2 cup barbecue sauce
  • 4 to 6 burger buns, split
Instructions:
  • In a large skillet, sauté sausage, mushrooms, onion, bell pepper, and carrots over medium heat for 8-10 minutes, stirring occasionally, until sausage is cooked through and vegetables are tender. Continue cooking for an additional 5 minutes until most of the liquid has evaporated.
  • Combine the tomatoes and barbecue sauce in the pot. Bring to a boil, then lower the heat and simmer without a cover for 15 to 20 minutes until the mixture thickens.
  • Scoop mixture into buns for serving.
