Loaded nachos with vibrant veggies, savory corned beef - a fun and satisfying meal.
Ingredients:
  • 1 (10 ounce) bag tortilla chips, or to taste
  • 0.5 cup shredded Mexican cheese blend
  • 1 teaspoon vegetable oil, or as needed
  • 1 (12 ounce) can corned beef
  • 2 cups shredded lettuce
  • 1.5 cups shredded purple cabbage
  • 1 tomato, diced
  • 0.25 cup diced onion
  • 0.5 cup guacamole
  • 1 tablespoon sour cream, or to taste
  • 1 tablespoon chopped green onions, or to taste
  • 1 pinch seasoned salt, or to taste
Instructions:
  • Begin by preheating your oven to 350 degrees Fahrenheit (175 degrees Celsius). Next, generously layer crispy tortilla chips on a baking sheet and shower them with a generous amount of shredded cheese.
  • Bake until the cheese is perfectly melted, around 7 minutes in the preheated oven.
  • Heat oil in a frying pan over medium heat. Cook corned beef until heated through, approximately 5 minutes.
  • Layer the corned beef, lettuce, cabbage, tomato, and onion onto the chips. Top with guacamole, sour cream, and green onions. Finish with a light sprinkle of seasoned salt. Gently toss right before serving.
