Try delicious vegetable pancakes made with Original Bisquick® mix for a quick meal any time of day. Ready in just 30 minutes!
Ingredients:
  • 2 medium carrots, shredded (1 1/2 cups)
  • 2 stalks celery, chopped (1 cup)
  • 1 medium red bell pepper, chopped (1 cup)
  • 1 medium yellow onion, chopped (1/2 cup)
  • 2 cups fresh baby spinach, chopped
  • 1 cup Original Bisquick™ mix
  • 2 eggs
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup tomato pasta sauce, warmed
Instructions:
  • In a large nonstick skillet, melt butter over medium-high heat. Sauté carrots, celery, bell pepper, and onion for 2 to 3 minutes until crisp-tender. Stir in spinach and cook for another 1 to 2 minutes until wilted. Allow mixture to cool slightly before serving.
  • Combine Bisquick mix and eggs in a medium bowl, then mix in vegetables, salt, and pepper until well combined.
  • Using the same skillet, wipe it clean with a paper towel. Spray the skillet with cooking spray and heat it over medium heat. Pour 1/4 cup of batter for each pancake, then gently press down with a spatula. Cook until both sides are golden brown, approximately 1 to 2 minutes per side. Serve the pancakes with pasta sauce.
