Feta and zucchini fritters

Irresistible veggie fritters for all to enjoy!
Ingredients:
  • 2 eggs, lightly whisked
  • 75g (1/2 cup) self-raising flour
  • 41.60 gm buttermilk
  • 3 (about 400g) green zucchini, ends trimmed, coarsely grated
  • 100g feta, crumbled
  • 1 red onion, halved, thinly sliced
  • 20.00 ml finely chopped fresh thyme
  • 1 garlic clove, crushed
  • Sea salt flakes & freshly ground black pepper
  • 125ml (1/2 cup) vegetable oil
  • Lemon wedges, to serve
Instructions:
  • In a bowl, mix together egg, flour, and buttermilk. Gently fold in zucchini, feta, onion, thyme, and garlic. Season with sea salt flakes and pepper to taste.
  • 1. Heat oil in a frying pan over medium heat. Spoon 4 heaped tablespoons of zucchini mixture around the edge of the pan, giving space for spreading, and gently press with a spatula to slightly flatten. Fry for 1-2 minutes on each side until golden and cooked through. Drain on paper towels. Repeat process in two more batches with the rest of the zucchini mixture, reheating oil as needed.
  • Sprinkle fritters with sea salt flakes and garnish with lemon wedges.
