Irresistible zucchini and feta fritters for picky eaters.
Ingredients:
  • 6 (about 700g) green zucchini, coarsely grated
  • 4.80 gm salt
  • 3 green shallots, ends trimmed, thinly sliced
  • 250.00 ml firmly packed finely chopped fresh continental parsley
  • 200g feta, coarsely crumbled
  • 75g (1/2 cup) plain flour
  • 3 eggs, lightly whisked
  • Freshly ground black pepper
  • 80ml (1/3 cup) olive oil
Instructions:
  • In a bowl, toss zucchini with salt. Cover and let sit for 10 minutes to draw out moisture. Squeeze zucchini gently to remove excess liquid.
  • In a medium bowl, mix together zucchini, green shallot, parsley, feta, flour, and egg. Season with pepper to taste.
  • In a heated frying pan, spoon 4 tablespoonfuls of the zucchini mixture around the edge and gently press down. Cook for 2 minutes on each side until fully cooked. Place on a paper towel-lined plate, cover with foil, and repeat for the remaining batches of zucchini mixture, ensuring to heat oil between each batch.
  • Serve the fritters on a plate.
