Vegie meatball sandwiches

Ingredients:
  • 500g lean beef mince
  • 1 small carrot, peeled, finely grated
  • 1 small zucchini, finely grated
  • 20.80 gm tomato sauce
  • 12 slices multigrain bread
  • 2 avocados, halved, stone removed, peeled, mashed
  • 2 ripe tomatoes, thinly sliced
  • 1 butter lettuce, leaves separated
  • 135g (1/2 cup) hummus
Instructions:
  • Prepare a baking tray by lining it with non-stick baking paper. In a large bowl, combine the mince, carrot, zucchini, and tomato sauce using your hands until well mixed. Roll 1 heaped tablespoon of the mixture into a ball and place it on the prepared tray. Continue this process with the remaining mixture.
  • Heat a large non-stick frying pan over medium heat. Cook the meatballs for 4-5 minutes, turning occasionally, until fully cooked. Remove from the pan and let them cool slightly before cutting each meatball in half.
  • On half of the bread, layer creamy avocado before adding the savory meatball, fresh tomato, and crisp lettuce. On the other half of the bread, generously spread the hummus. Bring both halves together to create a mouthwatering sandwich. Slice in half and wrap each portion in plastic wrap.
