Savory turkey veggie meatballs with melty mozzarella, a delicious pairing for orecchiette pasta.
Ingredients:
  • 1 cup shredded zucchini (about 1 medium)
  • Salt
  • 1 lb ground turkey
  • 1/2 cup Progresso™ Italian style bread crumbs
  • 1/3 cup grated red onion
  • 2 tablespoons grated Parmesan cheese
  • 2 cloves garlic, grated
  • About 1/2 cup pearl mozzarella
  • 1 box (1 lb) orecchiette (tiny disk) pasta
  • 2 tablespoons olive oil
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, finely chopped
  • 2 cans (14.5 oz each) Muir Glen™ organic fire roasted diced tomatoes, undrained
  • Salt and pepper to taste
  • 3 tablespoons chopped fresh basil leaves
Instructions:
  • Preheat the oven to 400°F and line a baking sheet with parchment paper or a nonstick baking mat. Lightly sprinkle the grated zucchini with salt and toss to coat, then let it sit while you prepare the other ingredients.
  • Remove excess liquid from the zucchini by squeezing it out, there should be a few tablespoons; dispose of the liquid.
  • Mix all Meatball ingredients (excluding mozzarella cheese) in a large bowl until combined. Scoop 1 teaspoonful of mixture into your hand, flatten into a patty, add 1 mozzarella pearl in the center, enclose the cheese, and roll into a ball. Place in the pan and repeat for the remaining meatballs.
  • Bake in the center of the oven for approximately 20 minutes, or until a meat thermometer inserted in the center of the meatballs reads 165°F and the cheese is melted.
  • Cook the pasta until it is perfectly al dente following the instructions on the box.
  • In a 10-inch skillet, warm olive oil over medium heat. Sauté chopped onion until translucent, then add chopped garlic and cook for another minute. Mix in tomatoes with their liquid and simmer until the liquid reduces. Season with salt and pepper, then finish off the sauce with fresh basil before serving.
  • Combine the cooked pasta, meatballs, and sauce in a large bowl, then top with fresh basil for a flavorful finishing touch.
