Sautéed mushroom and sausage stuffed peppers topped with melted mozzarella - perfect as appetizers or a hearty meal.
Ingredients:
  • 2 tablespoons canola or vegetable oil, divided
  • 1/4 (1-pound) package Jimmy Dean Premium Pork Sausage
  • 0.25 cup diced mushrooms
  • 1 cup pre-cooked white rice
  • 2 tablespoons chopped fresh parsley
  • 1 cup shredded mozzarella cheese, divided
  • salt and ground black pepper to taste
  • 1 pound mini bell peppers, halved lengthwise and seeded
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Heat 1 tablespoon of oil in a small frying pan over medium-high heat for 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring often to crumble the sausage into small pieces. Drain and set aside.
  • In the same pan, incorporate the remaining 1 tablespoon of oil and lower the heat to medium. Cook diced mushrooms for approximately 5 minutes until golden brown and softened.
  • Combine the sausage, mushrooms, rice, parsley, and 1/2 cup of mozzarella in a bowl. Season to taste, then stuff each bell pepper halfway with the mixture.
  • Sprinkle extra cheese on top of each pepper, then bake for 10 to 15 minutes until golden and bubbly.
  • Remove the roasted peppers from the oven and allow them to cool for 5 minutes before serving.
