Family's Secret Wild Game Jerky: A timeless recipe passed down through generations, perfect for showcasing fresh venison during hunting season.
Ingredients:
  • 2 pounds venison tenderloin
  • 0.25 cup vegetable oil
  • 2 teaspoons bacon drippings
  • 0.75 cup all-purpose flour
  • 0.25 teaspoon freshly ground black pepper
  • 1 egg, lightly beaten
  • 2 tablespoons milk
  • 1 cup dry bread crumbs
  • 0.5 cup crushed buttery round cracker crumbs
Instructions:
  • Slice the beef tenderloin into 1/2 inch steaks. Cut each steak in half horizontally, creating a small connection between the two halves. Score the edges of each steak to prevent curling while frying.
  • Heat oil and bacon drippings in a large skillet over medium-high heat. In a shallow dish, mix flour, salt, and pepper. In a separate bowl, whisk together egg and milk. In another dish, combine bread crumbs and cracker crumbs.
  • Coat the steaks in seasoned flour and gently pound them to slightly less than 1/4 inch thickness. Dip them in the egg mixture, then coat with crumbs on both sides. Place the steaks on a plate. Once all steaks are coated, carefully place them in hot oil in a single layer.
  • Sear steaks for 2 to 3 minutes per side until golden brown, then pat dry with paper towels and lightly drizzle with lemon juice.
