Savory orzo pasta with hearty ground beef and mixed vegetables, all cooked in a flavorful tomato broth.
Ingredients:
  • 1 pound ground beef
  • 1 small onion, minced
  • 1 teaspoon minced garlic
  • 0.5 (6 ounce) can tomato paste
  • 1 (28 ounce) can crushed tomatoes
  • 1 envelope onion soup mix
  • 2 beef bouillon cubes
  • 1 bay leaf
  • 1 (16 ounce) package frozen mixed vegetables
  • 2 quarts water
  • 0.66666668653488 cup orzo pasta
  • salt and ground black pepper to taste
Instructions:
  • Brown the ground beef in a large pot over medium heat for 7 to 10 minutes until cooked through. Remove excess fat from the beef. Stir in the onion and garlic and cook until the onion is soft, about 5 minutes.
  • Combine tomato paste, crushed tomatoes, onion soup mix, beef bouillon cubes, bay leaf, mixed vegetables, and water with the ground beef. Increase heat to medium-high and bring to a boil. Add orzo pasta and simmer for 10 minutes until tender. Season with salt and black pepper before serving.
