Versatile stuffing with chestnuts, dried fruit, and festive flavors. Perfect for both meat-eaters and vegetarians. Great for stuffing turkey or as a delicious side dish.
Ingredients:
  • 6 onions
  • olive oil
  • 2 tablespoons unsalted butter
  • 1 bunch of fresh sage (30g)
  • 1 whole nutmeg for grating
  • 100 g dried sour cranberries
  • 1 x 180 g packet chestnuts
  • 1 x 100 g packet dried apple
  • 2 clementines
  • 330 ml dry cider
  • 800 g stale bread
  • 1 kg higher-welfare pork sausagemeat
Instructions:
  • Preheat the oven to 190ºC/375ºF/gas 5. Place peeled and quartered onions in a food processor with a pinch of sea salt and pulse until chopped. In a large pan, heat 2 tablespoons of olive oil and butter, then add torn sage leaves, grated nutmeg, and brown the sage. Add the onions and cook for 15 minutes until golden. Stir in cranberries, chestnuts, sliced dried apples, salt, pepper, zest of clementines, and cider. Let it cool. Blitz stale bread into breadcrumbs and mix with the onion mixture. Press half of the stuffing into an oiled bundt tin. Mix sausagemeat with remaining stuffing, season, and press a third into another dish. Place a clementine half in the center. Bake both for 50 minutes until crispy. Enjoy the soft and juicy inside and crispy outside!
