Wedding cake pops

Indulge in festive and versatile cake pops for your special occasion.
Ingredients:
  • 340g pkt vanilla butter cake
  • 40.00 ml bought vanilla frosting
  • Icing sugar mixture, to dust
  • 250g white chocolate melts
  • White icing flowers, to decorate
  • White sprinkles, to decorate
  • Sanding sugar, to decorate
Instructions:
  • Preheat the oven to 180C. Prepare a 20cm round cake pan by greasing and lining the base with baking paper.
  • Prepare the vanilla butter cake according to the packet instructions. Pour the batter into the greased pan and bake for 40-45 minutes, or until a skewer inserted in the center comes out clean. Let it rest for 10 minutes after taking it out of the oven, then transfer it onto a wire rack to cool completely.
  • Trim the cake crusts with a serrated knife, then break the cake into small pieces and pulse in a food processor until fine crumbs form. Transfer to a bowl and mix in the vanilla frosting until combined.
  • Cover an oven tray with baking paper. Sprinkle a clean work surface with icing sugar mixture. Flatten two-thirds of the mixture into a 2cm-thick disc. Use a 3.5-cm fluted pastry cutter to create discs from the cake mixture and transfer them to the prepared tray. Roll out any remaining cake mixture as needed.
  • Shape the cake mixture into a 1.5cm-thick disc on a clean work surface. Use a 1.5cm fluted cutter to cut out discs and place them on the lined tray. Cover loosely with plastic wrap and refrigerate for 1 hour until firm.
  • Create a double boiler by placing the white chocolate melts in a heatproof bowl set over simmering water. Stir with a metal spoon until the chocolate is melted.
  • Dip a 1.5-cm disc in melted chocolate, then place it on top of a larger disc. Repeat with the rest of the discs and let them set for 5 minutes.
  • Dip 1 lollypop stick in chocolate and insert into the bottom of the larger disc. Repeat with the rest of the cake discs. Return to the tray.
  • Dunk 1 cake pop in the melted chocolate, ensuring it's fully coated. Lightly tap to remove extra chocolate. Place pops in a polystyrene base. Add sanding sugar, white sprinkles, or an icing flower on melted chocolate. Repeat with the rest of the pops. Let them rest for 30 minutes until the chocolate sets.
