Indulge in irresistible white chocolate cake pops for a sweet sugar rush.
Ingredients:
  • 1/2 x 600g iced white chocolate mud cake
  • 375g packet white chocolate melts
  • Rose pink food colouring
Instructions:
  • Begin by separating and discarding the icing from the cake. Then, use your hands to roughly crumble the cake into small pieces in a large bowl. Keep breaking the cake into smaller pieces until finely crumbled. Melt 2/3 cup of chocolate in a heatproof, microwave-safe bowl by microwaving on medium (50%) power for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until smooth. Combine the melted chocolate with the cake mixture and stir until thoroughly mixed. Take 2 level teaspoons of the mixture and roll it into a ball, then place it on a baking paper-lined tray. Repeat this step for the rest of the cake mixture.
  • Melt 1/4 cup chocolate in a heatproof, microwave-safe bowl in the microwave on medium (50%) for about 1 minute, stirring every 30 seconds with a metal spoon until smooth. Dip 2cm of one end of each lollipop stick into the melted chocolate, then insert one stick into each cake ball. Place back on the tray and freeze for 20 to 30 minutes until firm.
  • Reserve 1/3 cup of chocolate. Place the rest in a small microwave-safe bowl. Microwave on medium (50%) for 2 to 3 minutes, stirring every 30 seconds with a metal spoon until smooth. Dip cakes into melted chocolate one at a time. Tap gently on the bowl's side to remove extra chocolate. Insert a stick into the foam and let it stand for 10 minutes to set.
  • Take the rest of the chocolate and place it in a heatproof, microwave-safe bowl. Microwave on medium (50%) for 1 minute, stirring every 30 seconds with a metal spoon until smooth. Add pink food coloring to tint it. Transfer the chocolate to a snap-lock bag, snip off one corner, and drizzle the balls with chocolate. Let them stand for 20 minutes or until set. Serve and enjoy.
