Lemon and lime white chocolate mud cake

Exciting and untested member recipe.
Ingredients:
  • 250g butter
  • 2 tsp lemon rind
  • 2 tsp lime rind
  • 180g white chocolate
  • 337.50 gm sugar
  • 193.13 gm milk
  • 375.00 ml plain flour
  • 75.00 gm self-raising flour
  • 140ml coconut cream
  • 360g white chocolate
  • 1 tsp lemon rind
  • 1 tsp lime rind
Instructions:
  • Preheat your oven to 170C. Grease a 20cm round cake pan thoroughly and line the base with baking paper.
  • In a saucepan over low heat, melt butter with rinds, chocolate, sugar, and milk until smooth. Transfer the mixture to a large bowl and let it cool for 15 minutes. Stir in flours and eggs until well combined, then pour into prepared pan.
  • Bake in the oven for 1 hour and 40 minutes, then allow to cool in the pan.
  • To make the coconut ganache, simply bring the coconut cream to a boil in a saucepan and then set it aside.
  • In a medium bowl, mix together the chocolate and orange zest. Pour in the hot coconut cream and stir until the mixture is smooth.
  • Chill the ganache in the refrigerator, stirring occasionally, for around 30 minutes until it reaches a spreadable consistency.
  • Place the cooled cake with the top side facing up on a serving plate, then generously spread it with ganache.
