Lemon Lime Poke Cake

Citrus-infused white cake made with Betty Crocker™ Super Moist™ mix and frosting for a delightful dessert.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 3 teaspoons grated lemon peel
  • 1 cup boiling water
  • 1 box (4-serving size) Jell-O™ lime-flavored gelatin
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Cream Cheese Frosting
  • 1 teaspoon grated lime peel
  • 1/4 cup coarse light green sugar or green decorator sugar crystals
Instructions:
  • Preheat the oven to 350°F (or 325°F for dark or nonstick pan) and generously coat the bottom of a 13x9-inch pan with cooking spray.
  • Prepare and bake the cake mix in a 13x9-inch pan according to the package instructions, using water, oil, and egg whites, while also incorporating 2 teaspoons of lemon peel. Allow the cake to cool in the pan on a cooling rack for 20 minutes.
  • In a small bowl, dissolve gelatin in boiling water. Poke cake all over with the handle of a wooden spoon or tines of a meat fork. Slowly pour the gelatin over the cake, filling the holes. Allow the cake to cool completely for about 1 more hour.
  • Combine frosting, lime peel, and remaining lemon peel in a small bowl until thoroughly mixed. Use the mixture to frost the cake and finish by sprinkling sugar on top.
