Indulgent white chocolate mud cake for a memorable moment.
Ingredients:
  • 400g butter, chopped
  • 500g white chocolate (Cadbury Dream), chopped
  • 400ml water
  • 430.00 gm caster sugar
  • 8.80 gm vanilla extract
  • 4 eggs, lightly beaten
  • 500.00 ml plain flour, sifted
  • 300.00 gm self-raising flour, sifted
  • 600g Baking White Chocolate, chopped
  • 189.38 gm thickened cream
Instructions:
  • Preheat your oven to 150C. Prepare an 8.5cm deep, 22.5cm square cake pan by greasing and lining it.
  • In a large microwave-safe bowl, melt butter, chocolate, and 400ml water uncovered on HIGH for 3 to 4 minutes. Stir every minute with a metal spoon until smooth.
  • Combine caster sugar and vanilla with the chocolate mixture, stirring to mix. Add the egg and mix thoroughly. Sift the flours together over the chocolate mixture, stirring until fully combined.
  • Transfer the mixture into the pan and bake for 1 hour 50 minutes to 2 hours until a skewer inserted into the center comes out with moist crumbs. Let it cool in the pan, then remove the cake carefully. Wrap it in plastic wrap and foil, store in an airtight container at room temperature for 5 to 14 days.
  • With a sharp serrated knife, carefully split the cake in half. Lay the bottom half on a serving platter. Generously spread one-third of the ganache on the bottom layer. Place the top half of the cake on top and press gently. Cover the entire cake with the rest of the ganache, making sure to coat the sides too. Allow the cake to set for 24 hours. Finish by decorating with fresh roses. While serving, use a warm knife to maintain the ganache's smooth texture.
  • For White chocolate ganache: In a heatproof, microwave-safe bowl, mix together the white chocolate and cream. Microwave uncovered on MEDIUM (50%) for 2 to 3 minutes. Stir every minute with a metal spoon until the mixture is melted and smooth.
  • Chill in the fridge for 1 hour, stirring now and then with a metal spoon until it thickens to a spreadable consistency.
