Simple Cake Pops

Easy and versatile cake pops for any celebration. Bite-sized, sweet treats perfect for birthdays, showers, weddings, or any special event!
Ingredients:
  • 1 (15.25 ounce) package yellow cake mix (such as Betty Crocker®)
  • 1 cup water
  • 3 large eggs
  • 0.5 cup vegetable oil
  • 1 (16 ounce) container prepared chocolate frosting
  • 18 lollipop sticks
  • 1 (14 ounce) bag chocolate candy melts
  • 1 (.75 ounce) tube decorating icing
  • 1 tablespoon multicolored candy sprinkles, or as needed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • In a bowl, use an electric mixer on low speed to combine cake mix, water, oil, and eggs for 30 seconds. Increase speed to medium and beat for an additional 2 minutes.
  • Transfer the batter into the ready baking dish.
  • Bake in the preheated oven for 28 to 33 minutes until a toothpick comes out clean from the center. Allow to cool completely for at least 1 hour after removing from the oven.
  • Break the cooled cake into pieces in a large bowl.
  • Mix the frosting into the crumbled cake until it becomes sticky and begins to form, making sure not to over-mix. Chill in the refrigerator for a minimum of 30 minutes before proceeding.
  • Shape the cake mixture into eighteen 1 1/2-inch balls and place them on a baking sheet.
  • Pour 1/4 cup of candy melts into a microwave-safe bowl. Heat in the microwave until smooth, approximately 20 seconds on high.
  • Insert a lollipop stick halfway into each cake ball.
  • Dip the balls into the luscious melted chocolate and stand them upright in a block of styrofoam.
  • Sprinkle candy sprinkles onto the cake pops while the chocolate coating is still wet. Continue the process for the remaining cake pops, melting additional candy melts as necessary.
