Victoria Skonieczki's (Grandmom's) Nut Roll (Makowiec)

Delicious Polish/Czech holiday roll filled with nut meats or poppy seeds - perfect for dessert or breakfast.
Ingredients:
  • 7.5 cups walnuts
  • 0.75 cup butter
  • 0.5 cup white sugar
  • 3 tablespoons maple flavoring
  • 6 cups sifted all-purpose flour, divided, or as needed
  • 2 (.25 ounce) packages active dry yeast
  • 3 tablespoons white sugar
  • 1 teaspoon salt
  • 1 (8 ounce) container sour cream
  • 1 cup butter
  • 0.5 cup water
  • 3 large eggs at room temperature
Instructions:
  • Add walnuts to the food processor and pulse until coarsely chopped.
  • In a skillet over medium heat, melt 3/4 cup butter. Stir in 1/2 cup sugar until dissolved, about 1 minute. Remove from heat and add ground walnuts and maple flavoring, stirring to combine.
  • Combine 2 cups of flour, yeast, 3 tablespoons of sugar, and salt in a bowl.
  • In a saucepan over low heat, gently melt 1 cup of butter with sour cream and water. Heat for 2 minutes without boiling. Take off the heat and allow to cool for about 3 minutes before testing the temperature with a finger.
  • Gradually combine the sour cream mixture with the flour mixture while using an electric mixer on medium speed for 2 minutes, scraping the bowl as you mix. Add eggs and 1 cup of flour, briefly stir to combine, then beat on high speed for another 2 minutes. Slowly incorporate the remaining flour, 1 cup at a time, until a soft dough comes together.
  • Transfer the dough onto a floured surface, knead and shape into a ball. Allow it to rise for 10 minutes. Grease 2 jelly roll pans.
  • Divide the dough into 4 pieces and roll each out into a 14x12-inch rectangle. Spread 1/4 of the filling over each rectangle, leaving a 1-inch border. Roll up each rectangle lengthwise like a jelly roll and pinch the seams closed. Place them seam side down on the prepared pans, cover with a damp cloth, and let rise in a warm place for 1 hour.
  • Preheat oven to 350°F (175°C) for the perfect cooking temperature.
  • Bake in the preheated oven until golden, approximately 35 minutes. Let the rolls cool completely on a rack for 2 to 3 hours.
