Viennese family recipe for schnitzel, can use veal instead of pork.
Ingredients:
  • 1 quart oil for deep frying
  • 6 (6 ounce) fillets pork sirloin
  • 1 cup cake flour
  • 2 cups dry bread crumbs
  • 0.25 cup milk
  • salt and pepper to taste
Instructions:
  • Preheat deep-fryer to 350 degrees F (175 degrees C).
  • Tenderize the meat by pounding it with a mallet on a flat surface until it reaches a 1/8 to 1/4 inch thickness.
  • In two separate dishses, one for the flour and one for the bread crumbs, preferably using soup plates. In another soup plate, lightly beat the eggs, add milk, season lightly with salt and pepper.
  • Coat the meat in flour, pressing gently. Dip in egg mixture, then coat with breadcrumbs by pressing them onto the meat. Deep fry in cooking oil until golden brown.
