Cheese and Bacon Sandwiches

Cheesy bacon grilled sandwiches on sourdough or Vienna bread - a quick and delicious dinner in 30 minutes!
Ingredients:
  • 4 slices bacon
  • 2 slices red onion (1/4 inch thick)
  • 2 slices (3/4 oz each) mozzarella cheese
  • 4 slices sourdough or Vienna bread (1/2 inch thick)
Instructions:
  • Preheat a medium-size contact grill for 5 to 10 minutes. Arrange bacon on the grill, close the lid, and cook for 3 to 4 minutes until golden brown. Remove the bacon from the grill and drain on paper towels. Cut bacon slices in half crosswise.
  • Gently scrape excess drippings from the grill into the drip tray using a rubber scraper. Grill the onion with the lid closed for 4 to 6 minutes until tender.
  • Create a flavorful stack by sandwiching bacon, onion, and cheese between bread slices. Grill the sandwiches until the bread is toasted and the cheese is melted, about 3 to 5 minutes.
