Delicious broiled Bosc pear, bacon, and blue cheese focaccia sandwiches - perfect for brunch or a light supper!
Ingredients:
  • 1 Bosc pear, thinly sliced
  • 1.5 cups apple juice
  • 6 slices bacon
  • 2 rosemary focaccia bread, or other square rolls, split
  • 6 ounces blue cheese, crumbled
Instructions:
  • In a skillet, gently simmer the pear slices in apple juice over medium heat until softened, about 5 minutes. Remove pears from skillet and set aside, discarding the juice.
  • Cook the bacon in a skillet over medium-high heat until evenly browned. Drain on paper towels, crumble, and set aside.
  • Turn on the oven broiler to preheat.
  • Lay out the focaccia bread slices on a baking sheet. Evenly distribute the pear slices on top of the bread, followed by the bacon and blue cheese.
  • Place the sandwiches under the broiler until the cheese is melted and bubbly, approximately 2 minutes.
