Grilled Double-Cheese and Bacon Sandwiches

Delicious grilled cheese sandwiches made on the grill with smoky bacon and two cheeses for extra richness.
Ingredients:
  • 8 slices bacon
  • 4 (1/4-inch-thick) slices red onion
  • 4 (3/4-oz.) slices Cheddar cheese
  • 4 (3/4-oz.) slices mozzarella cheese
  • 8 (1/2-inch-thick) slices sourdough or Vienna bread
Instructions:
  • Preheat the contact grill for 5 minutes.
  • Place bacon on the bottom grill surface once it's heated. If needed, cook 4 slices at a time. Close the grill and cook for 3 to 4 minutes until browned. Remove bacon from grill and drain on paper towels. Cut bacon slices in half crosswise.
  • Using a rubber scraper, scrape off most of the drippings from the grill into the drip tray. Place the onions on the grill, close the lid, and cook for 4 to 6 minutes until they are tender.
  • Create mouthwatering sandwiches by stacking cheddar cheese, crispy bacon, onion, and mozzarella cheese between slices of bread. Grill two sandwiches at a time on the bottom grill surface until the bread turns golden and the cheese melts (3 to 5 minutes). Repeat with the rest of the sandwiches for a delicious meal.
